Our neighbor, generous to a fault, has shared all manner of delicious plants with us and our garden. We are for example generally overrun by rhubarb, propagated from a single plant gifted several years ago. Our cellar is full to overflowing this year with weird and generally outstanding potatoes also recommended by Deb. A new addition to the cellar this year is the jerusalem artichoke, growing in our yard for some time, also courtesy of Deb. Most years we have simply enjoyed this relative of the sunflower for visual reasons. However a large gust knocked over a few shrubs several weeks ago whereupon a large collection of tubers was unearthed. Roasted with potatoes and herbs from the garden they are delectable, though also very good diced raw and added to salads, a consistency not dissimilar to water chestnuts.
